The primary objective of the study is to design, construct and evaluate the portable biomass-fed fish dryer-smoker. The food equipment was designed and constructed at Brgy. Sampaloc, Tanay, Rizal. The study was conducted from January 2016 to February 2016. The study was carried out using complete randomized design (CRD) with three (3) treatment and three (3) replications per treatment. The treatments used in smoking were as follow: rice hull (T1), matured coconut husk (T2), and coco lumber sawdust (T3), each treatment was mixed with lemon grass for better taste and aroma. Carbonized mature coconut shell was used for drying. The parameters that were considered in determining the performance of the Portable Biomass-fed fish dryer were: specification as to materials used, smoking and drying capacity, maximum load capacity, smoking and drying efficiency, ignition time, operating time, operating cost and return on investment, quality of the product in terms of color, texture, aroma and taste. The portable biomass-fed fish dryer-smoker has a dimension of 0.508 m x 0.508 m 1.4478 m and was made up of galvanized iron sheets, stainless galvanized iron sheets, stainless round bars, and angle bar, flat bar, hinges, bolts and nuts, glass, screen, caster wheels, flat metal plate. The machine has the capacity to produce good quality smoked and dried fish using the different biomass fueled.
