Dissertation note: Thesis (Bachelor of Technology major in Hotel and Restaurant Management) -- University of Rizal System-Morong. Summary: EXECUTIVE SUMMARY: The study aimed to analyze the food sanitation practices in selected food stalls in selected markets in Rizal during the school year 2013-2014. The descriptive method design was used in the conduct of the study for the researchers used with the observation as tool for documentary analysis and gathering data. Based on the profile of the food stalls, In terms of types of food stall, permanent got the highest frequency of 30, in terms of location of food stall, inside the market got frequency of 21 and near the terminal got frequency of 8. For the type of meal sold, lunch got the highest frequency of 22. Lunch and in terms of hygiene of staff, item 1 the staff are wearing complete uniform got the highest rank of 5 is verbally as never, while the item 3 the staff are having cleaned hands and well trimmed nails got the lowest rank of 1 is verbally interpreted as often. On respondents profile, in terms of food stall permanent, got the highest frequency. In terms of location of food stall inside the market got the highest frequency, while near the terminal got the highest percent. In terms of type meal sold lunch, got the highest frequency, in terms of utensils used reusable utensils used, got the highest frequency. Perception of respondents in Food Sanitation Practices of Food Stall in selected in Market in Rizal in terms of Handling Tools and Equipment was verbally interpreted "often", Food Handling was verbally interpreted as "often" Dining Area as verbally interpreted as "often", Food Preparation Area as "often" and Hygiene of Staffs was verbally as "sometimes" The local government of every place in Rizal should continue its regulation and monitoring of the food establishments all over the municipalities to assure clean food stalls, clean dining areas for customers and healthy foods to serve. Findings of this study may be submitted to municipal health officer of every place in Rizal. Future studies of food sanitation practices in other municipality and learning institutions be conducted using other variables.
