Summary: EXECUTIVE SUMMARY: This study aimed to evaluate the ACCEPTABILITY OF LEMONGRASS (CYMBOPOGON CITRATUS) AS ADDED FLAVOR IN MAKING ICE CREAM. It also aimed to determine to the general acceptability of lemongrass as added flavor in making ice cream by using subjective evaluation with the use of hedonic scale and score sheet. This study measured the acceptability of lemongrass ice cream in terms of color, flavor, consistency, moisture and texture. This study was undertaken at the University of Rizal System during the school year 2015-2016. The respondents were the twenty (20) HRM Students twenty (20) CIT Instructors and twenty (20) Elementary Students of University of Rizal System. Weighted mean was used to measure the level of acceptability of lemongrass ice cream while one way annova was used to determine the significant difference on the acceptability of lemongrass ice cream in terms of color, flavor, consistency, moisture and texture. Based on the analysis of the gathered data, following findings were hereby summarized. On the overall Acceptability of Lemongrass Ice Cream with used of Hedonic Scale and Score Card as evaluated by the three (3) groups of respondents. College students rated the lemongrass ice cream as liked moderately with average weighted mean of 7.52 and was verbally interpreted as liked moderately. CIT instructors rated the lemongrass ice cream as liked moderately with an average mean of 7.85 and was verbally interpreted as like moderately. High school students rated the lemongrass as ice cream as liked moderately with an average weighted mean of 7.10 and was verbally interpreted as like moderately. On the level of acceptability of lemongrass (Cymbopogon citratus) Ice Cream in terms of Characteristics. In terms of color, the college students has a weighted mean of 4.40 and verbally interpreted as very much accepted, the CIT instructors has a weighted mean of 4.35 and verbally interpreted as very much accepted while the high school students has a weighted mean of 4.05 and verbally interpreted as very much accepted. In terms of flavor, the college students has a weighted mean of 4.25 and verbally interpreted as very much accepted, the CIT instructors has a weighted mean of 4.45 and verbally interpreted as very much accepted while high school students has a weighted mean of 3.85 and verbally interpreted as much accepted. In terms of consistency, college students has a weighted mean of 4.35 and verbally interpreted as very much accepted, the CIT instructors has a weighted mean of 4.70 and verbally interpreted as very much accepted, while the high school students has a weighted mean of 4.25 and verbally interpreted as very much accepted. In terms of moisture, the college students has a weighted mean of 3.90 and verbally interpreted as much accepted, the CIT instructors has a weighted mean of 4.05 and verbally interpreted as much accepted, while the high school students has a weighted mean of 3.40 and verbally interpreted as much accepted. In terms of texture, the college students has a weighted mean of 4.20 and verbally interpreted as very much accepted, the CIT instructors has a weighted mean of 4.40 and verbally interpreted as very much accepted, while the high school students has a weighted mean of 3.70 and verbally interpreted as much accepted. The null hypothesis is accepted which stated that there is no significant difference between the evaluation made by the three groups of respondents on the acceptability of lemongrass (Cymbopogon citratus) ice cream. As the result of foregoing and conclusions, the following recommendations were hereby offered; it is recommended to improve flavor and texture. Other studies should be considered in terms of other aspects.
