Summary: EXECUTIVE SUMMARY: The study aims to evaluate the acceptability of Himbabao Flower (Alleaenthusluzonicus) as meat extender in making patty. This study determined the general acceptability of Himbabao flower as Meat Extender in Making Patty using taste test form and sensory evaluation form. This is limited as to measure the acceptability of Himbabao Flower Patty in terms of appearance, taste/flavor, texture/consistency, aroma/smell and overall acceptability used to measure the level of acceptability of himbabao flower in making patty while independent t-test was used to determine the significant difference on the acceptability of himbabao flower in making patty in terms of appearance, taste/flavor, texture/consistency, aroma/smell, and overall acceptability. This is limited to measure the acceptability of himbabao flower patty in terms of appearance, taste/flavor, texture/consistency, aroma/smell and overall acceptability. Based on the analysis of the gathered data, the following significant findings are hereby summarized. On the evaluation of the two group of respondents in himbabao flower (Alleaethusluzonicus) as meat extender in making patty as perceived by the group of HRM professor with overall acceptability which obtained a weighted mean of 3.9 respectively and verbally interpreted as like moderate, while on the group of HRM students with overall acceptability which obtained weighted mean of 4.4 and verbally interpreted as like very much. On the level of acceptability of himbabao flower as meat extender in making patty as perceived by the group of HRM Professors, it obtained a weighted mean of 4.1 which is verbally interpreted as much acceptable while on the group of HRM students obtained a weighted mean of 4.3 which is verbally interpreted as very much acceptable. On the significant difference as revealed by the two groups of respondents using sensory evaluation form obtain a mean difference of .2 with 38 degree if freedom at .02 level of significance got a computed T-value of .77 is less than tabulated t-value of 2.021, thus the null hypothesis is accepted and verbally interpreted as not significant. Based on the findings of the study, the following conclusions were drawn: The Himbabao flower can be used as a meat extender in making patty. Researchers suggest to the housewife that himbabao flower can also be used as food added to pinakbet, since it was found out that this flower is a very nutrititous food. Since himbabao flower has been of high price in the market, it is not recommended for commercial purposes. Based on the foregoing findings and conclusions, the following recommendations are hereby offered: Further research and studies should be considered using other characteristics. Further research, should be conducted since it was found out that himbabao flower is a nutritious food.
