Summary, etc EXECUTIVE SUMMARY: The study aimed to determine the incidence of bacterial load of meat in selected slaughterhouses in Rizal. The study was conducted from September 2017 to January 2018 at the University of Rizal System Morong, Rizal SY. 2017-2018. Descriptive and Quantitative research design was employed in the study. The study used five (5) samples of meat I Town 1, Town 2, and Town 3 slaughterhouses to determine if Escherichia coli, Staphylococcus aureus, and Salmonella spp. Are present. In determining the rate of incidence of bacterial load in meat in selected slaughterhouses in Rizal, mean and standard deviation were used. chi square value was also utilized to determine the significant difference on the rate of incidence of bacterial load of meat. In terms of Town 1, the highest mean was obtained by Salmonella spp. With a mean of 9.2 and standard deviation of 1.1 followed by the Escherichia coli and staphylococcus aureus with both have mean of 9.0 and standard deviation of 0. In terms of Town 2, the highest mean was obtained by the Escherichia coli with a mean of 10.6 and a standard deviation of 0.89 followed by salmonella spp. With a mean of 9.2 and a standard deviation of 1.1 lastly, in staphylococcus aureus obtained the mean of 9.0 and a standard deviation of 0. In terms of Town 3, the highest was obtained by the Escherichia coli with a mean of 9.4 and a standard deviation of 0.89 followed by the salmonella spp. With a mean of 9.2 and a standard deviation of 1.1, lastly, in staphylococcus aureus obtained a mean of 9.0 and a standard deviation of 0. Based from the findings in Escherichia coli, Staphylococcus aureus and salmonella spp. Shows that there is no significant difference on the rate of incidence of bacterial load in meat in selected slaughterhouses in Rizal. Based on the findings, the meat from slaughterhouses of selected towns in Rizal are free from bacterial load and safe for consumption. Thus, the study recommended that people may consume meat from the selected towns, strict monitoring of meat inspector should be implemented, meat slaughterhouses should maintain sanitary practices. And lastly, vendors and consumers should practice food handling of meat and meat products.
