Dissertation note: ThesisBSBIO-PBURS2021 Summary: Pili (Canarium ovatum Engl.) is a fruit-bearing tree endemic to the Philippines especially found in the Bicol Region. It is a tropical tree preferring warm temperatures and well-distributed rainfall. Aside from the kernel, the Pili pulp is also an edible part of the fruit that is consumed by the locals but are discarded most of the time. The focal point of this study is to determine the potential of Pili pulp as an alternative material for making jams through the development of a standardized recipe for Pili pulp jam and the determination of its characteristics and acceptability in terms of its color, taste, consistency, texture and application as a spread. The study was conducted from August to October 2021 at Marcos Highway, Barangay Sampaloc, Tanay, Rizal. A sensory evaluation was conducted to determine the characteristics and acceptability of the Pili pulp jam. The researchers used a five scale product evaluation and a five-point Hedonic scale for the acceptability evaluation of the product. The result of the evaluation revealed that the Pili pulp jam was generally acceptable implying that the Pili pulp has the potential as an alternative source of jam. The researchers recommend that further studies be conducted to improve the shelf life of the Pili pulp (C. ovatum) jam and to subject the product to chemical analysis to determine the nutrient content and its health benefits. A market feasibility study may also be conducted on the product. The University of Rizal System may also include the product extension programs by introducing the use of pili pulp as an alternative material for making jam to the community and may produce pili pulp jam as part of its production activities. The University of Rizal System and the Local Government Unit may use the result of the study to encourage propagation of pili trees in the community for the supply of raw materials in jam making. The University of Rizal System may produce pili pulp jam as part of its production activities and may introduce and promote the use of pili pulp as an alternative material for making jam to the community through extension programs. The result of the study may serve as a means to encourage the use of under-utilized plants in making economically beneficial products. Information-dissemination activities maybe conducted to educate the community about the potentials and conservation of popular but environmentally and economically important plant species.
