Dissertation note: Thesis BSF University of Rizal System. Cardona 2003 Summary: The study is mainly concerned with the comparison on the utilization and acceptability of Star Apple and Governor Plum as an Ice Cream Flavor. This study to: Make ice cream out of star apple and Governor Plum Flavors, Determine the acceptability of the Star Apple Flavor Ice Cream and Governor Plum Flavor Ice Cream in terms of: 2.1 Appearance 2.2 Flavor / Taste 2.3 Texture 2.4 Aroma 3. Determine the significant difference between the Star Apple Flavor Ice Cream and Governor Plum Flavor Ice Cream in terms of the above-mentioned variables perceived by: 3.1 Children 3.2 Teenager or (early adults) 3.3 Adults 4. Determine the significant difference on the analysis for the utilization of governor plum and the Star Apple as ice cream as perceived by the respondent with respects to characteristics. This study includes the making of Star Apple Flavor Ice Cream and Governor Plum Flavor Ice Cream to determine their acceptability in terms of appearance, texture and flavors/taste and aroma. The process to be used in making these two kinds of flavored ice cream uses the same preparation except for its flavor. The researchers attempt to determine the difference of the flavored ice cream in terms of the abovementioned characteristics and their acceptability as perceived by the student respondents in different year levels. On acceptability between two kinds of ice cream Ratiles or Governor Plum ice cream ranked one with an obtain weighted mean of 8.43 verbally interpreted like very much, while ice cream star apple flavor obtained a weighted mean of 8.17 verbally like very much. On acceptability of Star Apple Flavor Ice Cream with respect to characteristics flavor of Ratiles Flavor Ice Cream obtained a weighted mean of 4.33 verbally interpreted excellent and it ranked number one, appearance and aroma obtained a weighted mean of 4.17 verbally interpreted very good, and the last in the rank is texture with a weighted mean of 4.13 verbally interpreted very good. Furthermore, Star Apple Flavor ice cream with respect to characteristics flavor obtained a weighted mean of 4.6 verbally interpreted excellent and it ranked first, aroma and appearance obtained a weighted of 4.3 verbally interpreted and texture obtained a weighted mean of 4 verbally interpreted very good. It further revealed that the obtained average weighted mean is 4.20 on Ratiles Flavor Ice Cream and 4.3 on Governors Plum Flavor Ice Cream the obtained average weighted mean is 4.30 as excellent. On acceptability of the two prepared ice cream with respect to the characteristics governor plum flavor ice cream obtained a mean of 4.2 with a standard deviation of 0.88 and ice cream Star Apple flavor ice cream a mean scores of 4.3 and with standard deviation of 0.21 As perceived by the children with respect to the characteristics the computed Fvalue obtained in finding the difference between the star apple and ratiles or governor plum ice cream is 0.72 which is less than the tabulated F-value of 5.99 using 1/6 degrees of freedom at 5 percent level of significant thus, the acceptance on the null hypothesis that is no significant difference between the star apple and governor plum flavor ice cream, while as perceived teenager with respect to the characteristics the computed Fvalue. On the difference between the star apple and governors plum (ratiles) is 2.25 greater than the tabulated F -value of 5.99, using 1/6 degrees of freedom at 5 percent level of significant, led to the rejection the null hypothesis that there is no significant difference between the star apple flavor ice cream and governor plum (ratiles) flavor ice cream and as perceived by the adult with respect to the characteristics the computed F- value on finding the difference between the star apple ice cream is 0.14 less than the tabulated F value of 5.99 using l/6 degrees of freedom at 5 percent level of significance which lead to the acceptance of the null hypothesis that there is no significant difference between the star apple flavor ice cream and governors plum ice cream. On finding the T test on the utilization of governors plum (ratiles) and star apple flavor ice cream as perceived by the respondents with respect to characteristics the computed P value between the two ice cream is 1.2 lesser than the tabulated F value of 3.18 using 3 degrees of freedom at 5% level of significance, which lead to the acceptance of the null hypothesis stating that there is no significant difference between the star apple ice cream and governors plum ice cream. On the basis of the summary of the findings, the following conclusions were drawn. Star Apple liavor ice cream and Governors (Ratiles) flavor ice cream was liked very much by the respondents. The flavor of the two ice cream the taste and aroma of the food as it is chewed and the typical of the product being score as to the sweetness of the fruit. The hypothesis stating that there is no significant difference between star apple flavor ice cream and governors plum flavor ice cream is sustained. In consonance with findings and conclusions drawn from the study it is recommended that: To improve the products it is recommended to upgrade and purchase equipment particularly fruit blender and ice cream maker. Since the preference test obtained a slightly difference of acceptance between the two kinds of ice cream it is recommended to further analyzed method like a different test and this test is applicable only for small differences such as slight changes in color, texture, flavor and appearance and a very noticeable changes in any characteristics of the food. This also recommended to make subjective test more objective considering such points as to accuracy, precision, and reliability. Further research on different tropical fruits is recommended to improve the extension and production of the institute.
