| 520 | _aEXECUTIVE SUMMARY: The study was mainly concerned with Acceptability of Bamboo Shoots (Bambusa Vulgaris) as an Extender in Making Chicken Nuggets in terms of appearance, aroma, flavor and texture as revealed by the two groups of respondents, in University of Rizal System Morong, Campus for the S.Y 2013-2014. There were thirty (30) students and ten (10) experts of the University of Rizal System Morong, Campus who were involved in the study. The researchers determined the significant difference on the level of acceptability of bamboo shoots as an extender in making chicken nuggets in terms of the given variables as perceived by the two groups of respondents using t-test. The study was conducted to determine the Acceptability of Bamboo Shoots as an Extender in Making Chicken Nuggets during the School Year 2013-2014 in the University of Rizal System Morong-Campus. Based on the summary of findings, it was found out that the general Acceptability of Bamboo Shoots as an Extender in Making Chicken Nuggets as perceived by the students, obtained a weighted mean of 9.4 verbally interpreted as 'Liked extremely' and as perceived by the experts, the obtained weighted mean of 7.6 was verbally interpreted as 'Liked Very Much'. In terms of appearance, the students obtained a weighted mean of 4.5 which ranked third and experts obtained a weighted mean of 4.2 which rank second. In terms of aroma, the student obtained a weighted mean of 4.3 which ranked fourth and experts obtained a weighted mean of 4.1 which ranked third. In terms of flavor, the student obtained a weighted 4.6 which ranked second and experts obtained a weighted mean of 3.7 which ranked fourth. In terms of texture, the student obtained a weighted mean of 5.0 and experts obtained a weighted mean of 4.6 both in the first rank. The following conclusions were drawn based on the summary of findings; first the Acceptability of Bamboo Shoots (Bambusa Vulgaris) as an Extender in Making Chicken Nuggets was 'Very Accepted' by the respondents in terms of different characteristics; second, The Acceptability of Bamboo Shoots (Bambusa Vulgaris) as an Extender in Making Chicken Nuggets as perceived by the two groups of respondents was 'Liked Very Much'. In the light of the findings and conclusions drawn, the following recommendations are hereby offered. First, the aroma and flavor of the product considering the proper mixture, measurement and quality of ingredients should be improved. Second, further experiments should be performed using other variables such as cost and appearance. Third, the usage of Bamboo Shoots in Making Chicken Nuggets and to other related products must be endorsed and implemented. And lastly, another method of preparation must be used when utilizing Bamboo Shoots. | ||
